Preheat the oven to 325°F (163°C). Grease a 9×13-inch baking dish.
Make the crust: In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared dish to form an even layer. Bake for 10 minutes, then remove from the oven and let cool.
Prepare the cheesecake filling: In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla and sour cream until combined.
Pour the cheesecake filling over the cooled crust, spreading evenly. Bake for 30-35 minutes, until the center is set and lightly golden.
Let the bars cool completely, then refrigerate for at least 2 hours.
