Ingredients:
– 1 cup chopped carrots
– 1 cup chopped celery
– 1 cup chopped potatoes
– 1 cup frozen peas
– 1 onion, chopped
– 4 cups vegetable broth
– 1 cup milk (or any plant-based milk)
– 1/4 cup flour
– 2 tablespoons olive oil
– 1 teaspoon dried thyme
– Salt and pepper to taste
